image1-8My go-to breakfast nearly every morning is eggs of some sort.  Whether poached, fried, or scrambled, I love how easy and versatile they are and the fact that they’re packed with so much good stuff (protein, calcium, biotin, vitamin B12, etc.)!  This easy scrambled takes 15 minutes to make and is perfect after your morning workout (high protein and carbs, low in fat – which is good for recovery).

Easy Egg Scramble Over Arugula
Servings: 1

Ingredients (try to use organic ingredients as much as possible):
– 2 Eggs, scrambled
– 1.5 ounces chopped yellow onion
– 2 ounces chopped mushrooms
– 1 ounce arugula
– 1/2 teaspoon ghee (clarified butter, I use this one)
– Salt & pepper to taste
– 1/2 ounce raw cheddar, shredded

Directions:
1. Preheat pan over medium heat and melt the ghee.
2. Add onions and mushrooms, cook for 10 minutes until onions are transparent and mushrooms are slightly browned, then turn heat to medium-low.
3. While the onions and mushrooms cook, scramble eggs with a pinch of salt and pepper and add arugula to a plate.
4. Add eggs to the pan and combine with onions and mushrooms.  Move egg combo frequently to scramble.
5. Serve eggs atop arugula and top with cheese.

It’s that simple!  Serve with fresh berries and enjoy!
