This summer has been a HOT one and cooking has been tough to do with the past two weeks being in triple digits here in central California!  If you’re sick of sweating in front of the stove my endive tuna recipe is simple, delicious, and takes less than 15 minutes to prepare – plus everyone in the fam is guaranteed to LOVE it (well, the tuna lovers at least)!

Endive Tuna Bites
Prep Time: 15 minutes
Yield: 6-8

Ingredients:

1 can Tuna (I like Wild Planet’s Non-GMO tuna)
4 Tbsp Mayonnaise
2 Tbsp Dijon Mustard
1 Tbsp Purple Onion, minced
1 Tbsp Capers, left whole or minced
1 tsp Fresh Parsley, minced
Chives, thinly cut, for garnish
Sun-dried Tomatoes, minced, for garnish
1-2 Small Endive
Salt & Pepper, to taste

Method:

1. Mince what needs to be minced and add to bowl with tuna, which you have already broken up with a fork.
2. Wash endive leaves and set aside to dry.
3. Add mayo, mustard, salt, pepper and mix all ingredients except garnishes and endive leaves.
4. Spoon generous portion onto each endive leaf.  Garnish with chives and tomatoes.
