I used to make a version of this recipe years ago when I was just learning to cook.  Those were in my Rachel Ray days (who I really do credit for teaching me some basic culinary principles despite her cheesy delivery)!  This recipe is easy enough for a novice cook to handle, but delicious enough for the most seasoned cook to appreciate.  Head to Instagram to see how I made this!

Smoked Sausage with Peppers and Onions
Recipe by: Alison Howard
Yield: 4 servings

Ingredients:

1 Tbsp olive oil
2 lbs uncooked smoked sausage, cut in thick pieces
3 medium bell peppers, assorted colors, seeds removed, sliced thick
1/2 medium purple onion, sliced thick
1/2 cup beer
2 Tbsp whole grain mustard

Directions:

  1. In a large skillet (I always use my Lodge cast iron skillet) over medium-high heat, add oil and sear sausage well on all sides, cooking through until done.  Remove and set aside.
  2. In the same skillet, add the bell peppers and onions and allow to cook for a few minutes, until color begins to develop. Add beer and mustard.  Give a good stir.
  3. Add sausage back to the pan and cook 5 minutes more, until heated through.  Serve with rice or cauliflower rice to keep it low carb.
