Remember the pesto recipe I posted yesterday?  I made it solely based on a craving I had for a cucumber salad with tomatoes, onions, asparagus, and mozzarella mixed with fresh pesto. YUM!  This vegetarian salad is so good and easy to make!  If you need more protein, add shrimp or steak or chicken (or all three – hello carnivores, I see you)!  I had it just as pictured one day and added steak the next day.

There really is not recipe for this; I simply chopped up some veggies I had in the fridge and mixed in the mozzarella and pesto.  You can modify this any way you like with any of your favorite veggies.  You can add in pasta (like farfalle or penne).  You can roast peppers and add that in. It’s all about what you’re craving and what you have on hand.  That’s the thing I love about food; it’s so versatile.
