If breakfast toast isn’t on your regular rotation it should be! I make some variation of it once a week for the family and they love it. You’re only limited by your imagination when it comes to this open-faced sandwich that has made it big in the breakfast world! You can layer any number of items, sweet or savory, or a combination of both.
Today I felt like spinach, tomato, avocado, and poached eggs, with Everything But the Bagel seasoning from Trader Joes of course! Poaching eggs is super simple with a little practice! To learn how to poach eggs you can check out my IGTV, but basically bring water and 1 tsp of vinegar (I use raw coconut vinegar by Coconut Secret) to a slow light boil, using a spoon create a whirlpool in the water. Gently pour the egg in the water and the whirlpool motion will do the work of enveloping the egg whites around the yolk. Cook for around 4 minutes and it’s perfect!
