Smoked Sausage with Peppers and Onions

I used to make a version of this recipe years ago when I was just learning to cook. Those were in my Rachel Ray days (who I really do credit for teaching me some basic culinary principles despite her cheesy delivery)! This recipe is easy enough for a novice cook to handle, but delicious enough for the most seasoned cook to appreciate. Head to Instagram to see how I made this!

Smoked Sausage with Peppers and Onions

Yield: 4 servings
Ingredients:
1 Tbsp olive oil
2 lbs uncooked smoked sausage, cut in thick pieces
3 medium bell peppers, assorted colors, seeds removed, sliced thick
1/2 medium purple onion, sliced thick
1/2 cup beer
2 Tbsp whole grain mustard
Directions:
- In a large skillet (I always use my Lodge cast iron skillet) over medium-high heat, add oil and sear sausage well on all sides, cooking through until done. Remove and set aside.
- In the same skillet, add the bell peppers and onions and allow to cook for a few minutes, until color begins to develop. Add beer and mustard. Give a good stir.
- Add sausage back to the pan and cook 5 minutes more, until heated through. Serve with rice or cauliflower rice to keep it low carb.
